Grenache, Syrah and Mourvèdre plunge their roots into the depths of the mother rock, which contributes to giving exceptional qualities to this wine. Manual harvests, very small yields and ageing for 18 months in large wooden vats called “foudres” for a superb result.

SOIL/CLIMATE

Situated on the low and medium-height terraces of Châteauneuf du Pape. Clay-limestone soil covered with rounded pebbles. The climate is Mediterranean with two dry seasons (one in winter and a longer one in summer) and two rainy seasons (heavy some years in autumn and lighter in spring). Finally, the presence of the Mistral wind throughout the year is a real advantage for the healthy growth of the vines.

WINEMAKING

Manual harvests with strict sorting in the vineyard and in our cellar. Parcellary vatting of partially destemmed grapes (10-15% of whole bunches for some vats), and fermentation at controlled temperature in concrete tulip vats. Gentle extraction by light pump-overs and punch-downs. Hot maceration for up to a fortnight after fermentation. Blending after malolactic fermentation, ageing in barrels (20%) and in large wooden vats called “foudres” (30%) for 12 months and then 6 months in concrete vats.

TASTING NOTES

This wine has a beautiful cherry red colour. Its expressive and charming nose of red berries and its ample and progressive, but never heavy, sensation on the palate make it an indulgent, subtle and sensual wine. The notes obtained from the ageing process complete the balance for an end result that is airy and full of light.

TASTING TIPS

A classy wine that pairs well with red meats, game, and flavourful cheeses.

Special mention for the traditional French gastronomic dish of “Lièvre à la Royale” (hare cooked in sauce).

We recommend serving it at 18°C..
